|Potatoes||10 Large, unpeeled and quartered|
|Onions||5 Large, quartered|
|Water/Vegetable stock||10 Cup (160 tbs)|
|Black pepper||1 Teaspoon|
1. In a large soup kettle, add the potatoes and onions, and add just enough water to cover and boil
2.Once boiled, let it simmer until a knife goes cleanly through the potatoes. It should take about 15 minutes
3.Take another kettle, keep near the food processor.Take the onions and potatoes in batches, add them to blender, and pour just enough water to ensure a smooth flowing consistency. Once done, add the smooth soup back to second kettle
4.The soup should be like light cream. Add no more water than necessary. Add seasoning to soup and blend
5.To make a richer version, add oil or butter.
6. Serve hot.
