Frank Filled Potatoes

Ingredients
  Baking potatoes 6 Medium
  Butter/Margarine 2 Tablespoon
  Chopped onion 1⁄4 Cup (4 tbs)
  Chopped green pepper 1⁄4 Cup (4 tbs)
  All-purpose flour 2 Tablespoon
  Milk 1 3⁄4 Cup (28 tbs)
  Shredded cheddar cheese 4 Ounce (1 Cup)
  Chopped pimiento 2 Tablespoon
  Salt 1⁄2 Teaspoon
  Pepper 1⁄4 Teaspoon
  Frankfurters 4 , cut into 1/4 inch slices
  Shredded cheddar cheese 2 Ounce (1/2 Cup)
Directions

GETTING READY
1.Start by rinsing the potatoes, and pat dry, also prick several times with a fork

MAKING
2. Lay down paper towels in microwave oven, and place the potatoes in a circle, make sure to leave 1 inch between each potato, now microwave at HIGH for 16 to 18 minutes,
3. Leave potatoes for 5 minutes
4. In a microwave, place butter in a 4-cup glass measure, heat it at HIGH for 45 seconds
5. Add onion and green pepper, and cover with heavy-duty plastic wrap, and microwave it at HIGH for 2 minutes
6. Also add flour, stirring until smooth, add milk, stirring well
7. Microwave at HIGH for 4 minutes or until thickened and bubbly, and then stir at 1-minute intervals
8. Make sure to stir in cheddar cheese, pimiento, salt, pepper and frankfurters, stir till cheese melts
9. With the help of a fork split the tops of potatoes lengthwise
10. Spoon about 1/2 cup topping over each potato, and
sprinkle potatoes with 1/2 cup Cheddar cheese

SERVING
11. Serve with a sauce of your choice
