Potato Nests With Savory Shavings

Ingredients
  Baking potatoes 2 3⁄4 Pound (3 Large)
  Vegetable oil 2 Cup (32 tbs) (For Frying)
  Parsley sprig 4
For savory shavings
  Grated parmesan cheese 1⁄4 Cup (4 tbs)
  Garlic salt 1⁄4 Teaspoon
  Paprika 1⁄2 Teaspoon
  Dried whole thyme 1⁄2 Teaspoon
  Potato shavings 1 Tablespoon (Reserve)
  Vegetable oil 2 Cup (32 tbs)
Directions

MAKING
1) Using a peeler, peel each potato lengthwise
2) Into a bowl of cold water, drop the shavings
3) Reserve the shavings of 1 whole potato for later
4) Using a knife, cut the 2 potatoes crosswise into halves
5) Using a mandolin, use the corrugated blades and slice the potato down to produce a waffle slice
6) Repeat the procedure till the potatoes are sliced
7) Place the waffle slices into a bowl of cold water
8) Allow the slices to stand in cold water for about 15 minutes
9) Drain the slices and then using absorbent kitchen towels, pat dry the slices
10) Into hot, fry the bird's nest or both layers of the frying basket, to prevent the potatoes from sticking to each other
11) Clip a smaller basket onto a big basket and fry the potato slices into the hot oil
12) Repeat the procedure till the potato slices are used up
13) Fill the nests with savory shavings
14) Into a bowl, mix together the parmesan cheese, garlic salt, paprika, whole thyme, potato shavings
15) Into a hot oil deep fry in batches till golden brown

SERVING
16) Serve hot
