Pan Hashed Potatoes
|Tomatoes||2 , skinned and chopped|
|Potatoes||1 Pound, mashed|
|Lean bacon rashers||2 , cooked and diced|
|Tomato slices||4 (For Garnish)|
|Parsley||1 Tablespoon, as required (For Garnish)|
1) In a bowl, combine the chopped tomatoes, mashed potatoes, bacon, salt and pepper to taste.
2) Mix thoroughly and shape the mixture into circles with floured hands.
3) In a greased frying pan, cook the shapes until evenly browned on both sides.
4) Slice the Pan Hashed Potatoes into wedges, garnish with the sliced tomatoes and parsley, serve hot with fried or poached eggs, if desired.
