Country Fried Potatoes
|Lard||1⁄3 Cup (5.33 tbs)|
|Peeled potatoes||6 Cup (96 tbs), sliced (1/4" Thick)|
|Onions||1 Cup (16 tbs), sliced|
1. In a large skillet, heat the lard till melted and arrange a layer of the sliced potatoes on top of the oil. On top of the potatoes, layer down the onions and keep repeating the process till both onions and potatoes are used up.
2. Season the layers with salt and pepper and saute over medium heat for 15minutes.
3. Uncover the pan and then saute again for 10 or longer till the potatoes are crisp, brown and cooked through.
4. Sprinkle with parsley and just before serving fold and half while serving on a heated platter.
