Potato Oatcakes

Ingredients
Potatoes - 1 lb [500 g], sieved or riced
Fine oatmeal - 6 oz [150 g]
A little milk to bind
Salt
Directions

MAKING
1) In a bowl, combine the potatoes, oatmeal, and salt and mix well.
2) Pour in enough milk to form a stiff dough.
3) On a floured board, roll out the dough to a 1/8th inch (0.25 cm) thickness.
4) Using a fork, create holes and cut into rounds.
5) Place on a lightly greased frying pan or griddle and bake.

SERVING
6) Top Potato Oatcakes with butter.
7) Works as a great side to soups or salads.
