Stuffed Baked Potatoes
|Baking potatoes||32 Ounce (4 In Number Of 8 Ounce Each)|
|Half and half||1⁄2 Cup (8 tbs)|
|Shredded cheddar cheese||1 Ounce (1/4 Cup)|
|Dried parsley flakes||2 Teaspoon|
|Dry mustard||1⁄4 Teaspoon|
Cut thin slice from the top of each potato.
Scoop out inside with a spoon, leaving a thin shell.
Add remaining ingredients except 1/4 cup cheese and paprika to potatoes.
Mash until no lumps remain.
Spoon one-fourth of the potato mixture into each shell.
Place stuffed potatoes in square baking dish, 8 x 8 inches.
Sprinkle with remaining 1/4 cup cheese and the paprika.
Microwave at MEDIUM-HIGH (70%) until cheese is melted and potatoes are heated through, 3 to 4 minutes.
