Louella's Mashed Potatoes
|Russet potatoes||5 Medium, peeled|
|Unsalted butter||1⁄4 Cup (4 tbs)|
|Evaporated milk||12 Ounce (1 Can)|
|Ground black pepper||1 Teaspoon|
Place the potatoes in a large saucepan and add enough water to cover.
Bring the water to a boil over high heat, then immediately turn down the heat until the water is just simmering.
Add 2 teaspoons salt and simmer for about 20 minutes, or until fork-tender.
Dram the potatoes and return them to the saucepan.
In a separate small saucepan, gently heat the butter, evaporated milk, the remaining 2 teaspoons salt, and the pepper.
Add to the potatoes and mash with a potato masher.
Adjust the seasonings, adding more salt and pepper if needed before serving.
