Tangy Mashed Potatoes
|Potatoes||2 Pound, peeled|
|Potatoes||2 Pound, peeled, cut into 3/4 inch pieces|
|Non fat yogurt||1 Cup (16 tbs)|
|Plain nonfat yogurt||1 Cup (16 tbs)|
|Green onion||1⁄4 Cup (4 tbs), sliced|
|Sliced green onion||1⁄4 Cup (4 tbs)|
1) In a pot of boiling water, cook the potatoes for about 20 minutes or until tender. Drain and keep aside.
2) Using a blender, mix together yoghurt, potatoes and margarine until frothy.
3) Add in the green onions, Season with salt and pepper.
4) Serve Mashed Potatoes.
