Planked Pompand With Mashed Potatoes And Peas

Ingredients
  Pompano 2 Pound
  Pompano fillets 2 Pound
  Olive oil 2 Tablespoon
  Lemon juice 2 Tablespoon
  Salt To Taste
  Potatoes 1 Cup (16 tbs), mashed
  Freshly ground black pepper To Taste
  Mashed potatoes 1 Cup (16 tbs)
  Green peas 1 Cup (16 tbs), cooked
  Parsley 1 Tablespoon, chopped (As A Garnish)
Directions

GETTING READY
1. Season the plank
2. Preheat the plank to 350 degrees

MAKING
3. Brush the fillets with olive oil and lemon juice
4. Season with salt and pepper
5. Place these fillets into the preheated oval of the wooden plank
6. Bake for 30 minutes or till done

FINALIZING
7. Arrange a layer of mashed potatoes around the cooked fish just before serving
8. Spoon the cooked peas around the potato ring
9. Return to the oven for 5 more minutes or till the fish is hot through

SERVING
10. Garnish with chopped parsley and serve
