Carrot Stuffed Potatoes

Ingredients
  Baked potatoes 6 Large
  Salt 3⁄4 Teaspoon
  Pepper 1⁄8 Teaspoon
  Butter 1⁄3 Cup (5.33 tbs)
  Hot milk 1⁄4 Cup (4 tbs)
  Carrots 6 , cooked and mashed
  Paprika 1 Tablespoon
  Parsley 1 Tablespoon, chopped
Directions

GETTING READY
1) Preheat the oven to 350°F.

MAKING
2) From the top of baked potatoes, cut slice and scoop out inside.
3) Mash thoroughly.
4) To the mashed potatoes, add seasonings, butter and milk.
5) Beat the mixture until light.
6) Blend in mashed carrots.
7) Fill the potato shells with the mashed mixture.
8) Brown lightly in the oven for about 15 minutes.

SERVING
9) Serve hot, sprinkled with chopped parsley and paprika.
