Easy Scalloped Potatoes and Ham
|Cheese cracker crumbs/Poppy-seed cracker crumbs||1⁄2 Cup (8 tbs)|
|Celery||1⁄2 Cup (8 tbs), chopped|
|Onion||1⁄4 Cup (4 tbs), chopped|
|Frozen creamed peas and potatoes||20 Ounce (Two 10 Ounce Packages)|
|Milk||1⁄2 Cup (8 tbs)|
|Pimento||1⁄4 Cup (4 tbs), chopped|
|Prepared mustard||2 Teaspoon|
|Cooked ham||8 Ounce, cut in 1/2-inch cubes (2 Cups)|
|Watercress||1 (For Garnish)|
1 In a small bowl, melt 1 tablespoon butter or margarine at 100% (HIGH) 30 seconds.
2 Stir in cracker crumbs; set aside.
3 In a 2-quart casserole with lid, combine 2 tablespoons butter or margarine, celery and onion. Cover.
4 Microwave at 100% (HIGH) for 3 minutes; stir once.
5 Add frozen creamed peas and potatoes, milk, pimento and mustard. Cover.
6 Microwave at 100% (HIGH)for 6 minutes.
7 Stir until sauce is smooth.
8 Stir in ham. Cover.
9 Microwave at 100% (HIGH) for 6 to 7 minutes or until heated through. Stir.
10 Sprinkle buttered crumbs around edge of dish.
11 Garnish with watercress.
