Cheesy Potato And Onion Pate With Caraway Seeds

Ingredients
  Potatoes 1⁄2 Pound, peeled, cubed (225 Gram)
  Onions 4 Ounce, peeled, thinly sliced (100 Gram)
  Butter 2 Ounce
  Caraway seeds 1⁄2 Ounce
  Eggs 2
  Cheese curd 1⁄2 Pound (225 Gram)
  Sea salt To Taste
  Black pepper To Taste, freshly ground
Directions

GETTING READY
1. Rinse the potatoes
2. In a large pan, place the potatoes and the onions
3. Add water to just cover the vegetables
4. Boil for 15 minutes till soft and then drain
5. Place a sieve over a bowl and pass the boiled potatoes through the sieve to get a smooth puree
6. Set aside till required

MAKING
7. In a large pan, heat the butter
8. Add the caraway seeds and stir fry gently for a minute till they release their aroma and flavor
9. Tip the seeds into the prepared potato puree
10. In another large bowl, tip in the eggs and blend well.
11. Add the curd cheese to the same bowl and mix again
12. Tip this mixture into the hot potato puree mixture.
13. Season to taste

FINALIZING
14. Cool and transfer to individual serving bowls

SERVING
15. Chill and serve with celery sticks, wedges of pear or apple, crackers or toasted rye bread

TIP
The potato mixture should be hot when the egg and curd cheese mixture is added. If it is not hot, microwave for a minute on HIGH just before adding the egg curd cheese mixture
