Buttermilk Sweet Potato Puree
|Sweet potatoes||1 1⁄4 Pound, peeled and cut into 1-inch chunks|
|Buttermilk||1⁄3 Cup (5.33 tbs)|
|Unsalted butter||1 Tablespoon|
|Ground cardamom/Ground cinnamon||1⁄4 Teaspoon|
Put potatoes in a microwavable bowl with water and partially cover with plastic wrap.
Microwave until fork-tender, 5 to 7 minutes.
Transfer potatoes to a food processor.
Add buttermilk, butter, salt, and cardamom.
Process until smooth.
Serve as desired.
