Fabulous Zucchini French Fries
|Flour||1 Cup (16 tbs)|
|Water||1 1⁄2 Tablespoon|
|Grated parmesan cheese||1 Cup (16 tbs)|
|Seasoned salt/Garlic salt||To Taste|
|Vegetable oil||2 Cup (32 tbs) (For Deep Frying)|
Remove tips from unpeeled zucchini and cut into shoestring strips 3 or 4 inches long.
Sprinkle well with salt and roll lightly in flour.
Shake off excess flour and drop strips, a handful at a time, into eggs beaten lightly with 1 1/2 tablespoons water.
In wide shallow pan, combine flour with Parmesan cheese and seasoned salt or garlic salt, if you wish.
Roll zucchini in flour mixture to coat evenly and spread on paper towels to dry.
This may be done ahead of the time you wish to fry the zucchini.
Heat vegetable oil to 375°F in deep kettle.
Fry strips, a handful at a time, until crisp and golden.
Drain on paper towels set in shallow tray.
Keep strips warm in 250°F oven until all are fried.
Heap into a napkin-lined basket and sprinkle again with salt.
