Roast Potatoes With Sage

Ingredients
  Baking potatoes 6
  Extra virgin olive oil/Vegetable rapseed oil 4 Tablespoon
  Fresh sage leaves 1 Cup (16 tbs), roughly chopped
  Freshly ground black pepper To Taste
Directions

Preheat the oven to 220°C/425°F/gas mark 7.
quarter the potatoes.
Place in a pan of boiling water for 5 minutes, drain and place on a baking tray.
Add the oil and the sage leaves to the tray.
Mix all the ingredients together and season well with black pepper.
Place in the oven and cook for 50 minutes, turning them every 15 minutes to ensure even cooking.
