Roast Potatoes with Sage
|Extra virgin olive oil/Vegetable rapseed oil||4 Tablespoon|
|Fresh sage leaves||1 Cup (16 tbs), roughly chopped|
|Freshly ground black pepper||To Taste|
Preheat the oven to 220°C/425°F/gas mark 7.
quarter the potatoes.
Place in a pan of boiling water for 5 minutes, drain and place on a baking tray.
Add the oil and the sage leaves to the tray.
Mix all the ingredients together and season well with black pepper.
Place in the oven and cook for 50 minutes, turning them every 15 minutes to ensure even cooking.
