Lightly Stuffed Potatoes
|Baking potatoes||2 , scrubbed|
|Low fat cottage cheese||1 Cup (16 tbs)|
|Part skim mozzarella cheese||2 Ounce, shredded|
|Parmesan cheese||1⁄4 Cup (4 tbs), freshly grated|
|Fresh parsley||2 Tablespoon, chopped|
|Fresh dill/1 tablespoon dried dillweed||2 Tablespoon, chopped|
|Freshly ground pepper||To Taste|
Preheat oven to 350 degrees.
Bake potatoes for 1 hour or until tender.
Cut potatoes into halves lengthwise; scoop out pulp, leaving 1/2-inch shells.
Into a bowl place potato pulp.
Add cottage cheese, mozzarella cheese, Parmesan cheese, parsley, dill and pepper; mix well.
Spoon into potato shells.
On a baking sheet place the stuffed potatoes.
Bake for 15 minutes or until lightly browned.
