Scrub the potatoes and bake in the centre of a very moderate oven (350°F - Gas Mark 3) for about 1 1/2 hours.
30 minutes before the potatoes are ready, put the sausages in to cook.
Cut the potatoes in half, scoop out the centre and put into a basin.
Mash well, add butter or margarine, seasoning and cheese.
Pile into the potato skins, t»p with a sausage and serve.
