|Bacon fat/Other . shortening||1⁄4 Cup (4 tbs)|
|Sliced onions||1 Cup (16 tbs)|
|White potatoes||4 Cup (64 tbs), pared and sliced (1/4" Thick, Raw Pared)|
|Salt||1 1⁄4 Teaspoon|
Heat bacon fat in covered skillet.
Arrange onions and potatoes in the fat, then sprinkle with salt and pepper.
Saute, covered, over low heat for 15 min.
Then remove cover, turn up heat to medium and saute 10 min longer or until potatoes are brown and crusty, turning occasionally.
