Ingredients
  Instant mashed potatoes 3 1⁄2 Ounce (1 Package)
  Butter/Margarine 2 Tablespoon
  Egg yolks 2
  Chopped green onion tops 2 Tablespoon
  Salt 1⁄2 Teaspoon
  Pepper 1 Dash
  Egg whites 2
  Mayonnaise/Salad dressing 2 Tablespoon
  Lemon juice 1⁄2 Teaspoon
Directions

Prepare instant mashed potatoes according to package directions, omitting the milk called for.
Add butter or margarine, egg yolks, green onion tops, salt, and pepper to mashed potatoes; mix well.
Spoon 6 mounds onto foil-covered baking sheet.
Beat egg whites till stiff peaks form; fold in mayonnaise and lemon juice.
Top each potato mound with egg white mixture.
Bake in moderate oven (350°) for 10 to 12 minutes or till egg whites are golden.
