2 Pound, cooked, peeled, and cut crosswise into thick pieces (5 To 6 Medium Sized)
Canned peach slices
8 Ounce, well drained (1 Can)
Combine brown sugar, cashews, salt, and ginger.
In 10 x 6 x 2-inch baking dish layer half the sweet potatoes, half the peach slices, and half the brown sugar mixture.
Dot with butter or margarine.
Bake, covered, in 350°F oven for 30 minutes.
Uncover and bake mixture for about 10 minutes more.
Spoon brown sugar syrup over potatoes before serving.
