Oven Potato Medley
|Baking potatoes||1 Pound, cut in to 3/4 inch chunks|
|Sweet potatoes||1 Pound, cut in to 3/4 inch chunks|
|Shallots||4 Large, sliced|
|Ground nutmeg||1⁄4 Teaspoon|
|Apple juice||1⁄4 Cup (4 tbs)|
|Raspberry wine vinegar||1⁄4 Cup (4 tbs)|
Preheat the oven to 400°F.
Coat a 13" X 9" baking pan with cooking spray.
Place the baking potatoes, sweet potatoes, shallots, salt, and nutmeg in the prepared pan and generously coat with cooking spray.
Roast the potatoes, stirring occasionally, for 1 hour, or until tender.
Remove to a serving bowl.
Stir the apple juice and vinegar into the pan, scraping any browned bits from the bottom of the pan.
Pour over the potatoes, tossing to coat.
