Twice Baked Stuffed Potatoes
|Skim milk||1⁄4 Cup (4 tbs)|
|Low fat cottage cheese||2 Tablespoon|
|Scallion tops/Chives||1 Tablespoon, minced|
|Ground black pepper||1⁄8 Teaspoon|
|Shredded reduced fat cheddar cheese||2 Tablespoon|
Scrub the potatoes and place them side by side on a paper towel.
Microwave on high for 6 to 8 minutes, or until tender.Cut a thin slice from the top of each potato (discard these slices).
Scoop out the flesh, leaving a 1/4" sturdy shell, and place in a medium bowl.
Add the milk, cottage cheese, scallions or chives, and pepper.
Spoon the mixture into the shells.
Place on a plate.
Microwave on high for 3 to 4 minutes.
Sprinkle with the Cheddar.
Microwave on medium (50% power) for 2 minutes, or until the cheese is melted.
