Crunchy Crusted Potatoes
|Potatoes||2 , peeled and quartered|
|Butter||1⁄4 Cup (4 tbs)|
|Cornflake crumbs||1⁄2 Cup (8 tbs)|
Place butter in a custard cup and microwave 30 to 45 seconds.
Mix cornflake crumbs, salt, pepper and paprika in a bowl.
Dip each potato piece into butter, then into the crumb mixture.
Arrange in a circle on a large platter.
Cover with a paper towel and microwave 6 minutes.
Turn dish one-half turn after 3 minutes.
