Easy Potato Galette
|Potatoes||1 1⁄2 Pound, thinly sliced (4 Medium Ones)|
|Olive oil/Vegetable oil||3 Tablespoon|
|Garlic||3 Clove (15 gm), finely chopped|
|Grated parmesan cheese||2 Tablespoon|
|Chopped fresh parsley||2 Tablespoon|
1. Arrange potato slices, overlapping, in circles in pie plate, 10 x 1 1/2 inches. Mix oil, salt and garlic; spoon evenly over potatoes.
2. Cover tightly and microwave on high 9 to 12 minutes, rotating pie plate 1/2 turn after 5 minutes, until potatoes are tender. Let stand covered 3 minutes. Sprinkle with cheese and parsley. Remove from pie plate and garnish with thin tomato wedges if desired.
