Bacon & Cheese Stuffed Potatoes

  Large baking potatoes 2 Pound (4 Whole)
  Milk 2⁄3 Cup (10.67 tbs)
  Margarine/Butter 1⁄4 Cup (4 tbs), softened
  Salt 1⁄4 Teaspoon
  Pepper 1 Dash
  Shredded cheddar cheese 1 Ounce (1/4 Cup)
  Crisp cooked bacon slices 4 , crumbled to make 1/4 cup
  Chopped fresh chives 2 Tablespoon

1. Prepare and microwave potatoes for 4 whole.
2. Cut thin lengthwise slice from each potato; scoop out inside, leaving a thin shell. Mash potatoes until no lumps remain. Beat in small amounts of the milk until fluffy. Add margarine, salt and pepper; beat vigorously until mixture is light and fluffy. Stir in cheese. Fill potato shells with potato mixture.
3. Arrange potatoes in circle on 10-inch plate. Microwave uncovered on high 3 to 5 minutes or until potatoes are hot. Sprinkle with bacon and chives.
