Creamy Mashed Potatoes

Ingredients
  Potatoes 6
  Half and half 1⁄2 Cup (8 tbs)
  Butter stick 1⁄2
  Salt To Taste
  Pepper To Taste
  Cheddar cheese 1⁄2 Cup (8 tbs)
Directions

Take a pan and add water. When it begins to boil add salt and the cubes of potato. Cook. When the potatoes are done, take out into a mixing bowl. Pour in half & half and the melted butter. Blend using a food processor or hand blender. Add salt, pepper and mix. Add in the cheese and blend to a smooth paste. Serve warm. Enjoy!!

I love mashed potatoes using Golden ukons or red potatoes unpeeled-good fiber. We always add roasted garlic to our hand mashed potatoes. I like them a bit chunky - real comfort food. They also a great with additions like horseradish, wasabi, or bacon bits, chives, or even Reggiano-Parmesano as they are a blank canvas. Shanti/Mary-Anne
