Potatoes O Brien
|Potatoes||4 Medium, pared and cubed|
|Onion||1 Small, chopped|
|Diced pepper red||1⁄4 Cup (4 tbs)|
|Green pepper||1⁄4 Cup (4 tbs), diced|
|Butter/Margarine||1⁄4 Cup (4 tbs) (1/2 Stick)|
1. Cook the potatoes, covered, in boiling salted water in a medium-size saucepan 15 minutes, or until tender; drain.
2. Saute onion and red and green peppers in the butter or margarine until soft in a medium-size skillet. Stir in potatoes; sprinkle with salt and pepper.
3. Cook, stirring carefully several times, 5 minutes, or until the potatoes are lightly browned.
