Ingredients
  Sweet potatoes 4 , boiled and mashed well (peeled)
  Sugar 1 1⁄2 Cup (24 tbs)
  Ghee 1⁄2 Cup (8 tbs)
  Coconut milk 1 1⁄2 Cup (24 tbs)
  Vanilla essence 1 Teaspoon
Directions

Mix sugar and coconut milk and boil once.
Add sweet potatoes and stir till the mixture is pink and golden.
Add a little ghee at a time and cook till the mixture leaves the sides of the pan.
Add vanilla essence and blend.
Spread onto a greased plate.
Cool and cut into squares.
Serve at room temperature with cream, if desired.
