French Fries

Ingredients
  Baking potatoes 2 , peeled
  Fat 1 1⁄2 Cup (24 tbs) (for deep frying)
  Salt To Taste
Directions

Cut potatoes lengthwise in 3/8-inch-wide strips.
Fry potatoes, a few at a time, in deep hot fat (360°) till crisp and golden, 6 to 7 minutes.
Drain on paper toweling.
(For crisper French fries, fry potatoes at 360° till lightly browned, about 5 minutes.
Drain on paper toweling and cool.
Just before serving, return French fries to fat at 360° for 2 minutes more.) Sprinkle potatoes immediately with salt.
Serve at once.
