Western Supper Scramble
|Italian sausage||1 Pound, casings removed (Hot / Mild)|
|Russet potato||1 , scrubbed and cut into 1/2 inch cubes|
|Bell pepper||1 Large, stemmed, seeded and cut into 1/2 into pieces (Red / Green)|
|Yellow onion||1 Large, chopped|
|Water||1⁄2 Cup (8 tbs)|
|Eggs||5 Large, beaten to blend|
|Shredded cheddar cheese||1⁄2 Cup (8 tbs)|
In a 10- to 12-inch nonstick frying pan over medium-high heat, break up sausage with a spoon and cook with potato, stirring occasionally, until sausage starts to brown, 10 to 15 minutes.
Add bell pepper, yellow onion, and water; continue cooking, stirring gently a few times, until potato is tender when pierced, about 15 minutes.
Reduce heat to medium.
Push sausage mixture to half of pan; pour eggs into other half.
Cook eggs, stirring occasionally, until set to your liking.
Sprinkle cheese over eggs.
