Western Supper Scramble

  Italian sausage 1 Pound, casings removed (Hot / Mild)
  Russet potato 1 , scrubbed and cut into 1/2 inch cubes
  Bell pepper 1 Large, stemmed, seeded and cut into 1/2 into pieces (Red / Green)
  Yellow onion 1 Large, chopped
  Water 1⁄2 Cup (8 tbs)
  Eggs 5 Large, beaten to blend
  Shredded cheddar cheese 1⁄2 Cup (8 tbs)

In a 10- to 12-inch nonstick frying pan over medium-high heat, break up sausage with a spoon and cook with potato, stirring occasionally, until sausage starts to brown, 10 to 15 minutes.
Add bell pepper, yellow onion, and water; continue cooking, stirring gently a few times, until potato is tender when pierced, about 15 minutes.
Reduce heat to medium.
Push sausage mixture to half of pan; pour eggs into other half.
Cook eggs, stirring occasionally, until set to your liking.
Sprinkle cheese over eggs.
