Mashed Potato Puff
|Water||1 1⁄2 Cup (24 tbs)|
|Milk||1⁄2 Cup (8 tbs)|
|Instant potato flakes||1 1⁄2 Cup (24 tbs)|
|Creamed cottage cheese||1 Cup (16 tbs)|
|Shredded process american cheese||1 Cup (16 tbs)|
|Green onions||3 , sliced|
|Prepared mustard||2 Teaspoon|
|Garlic salt||1⁄4 Teaspoon|
|Eggs||2 , separated|
|Buttered dry bread crumbs||1⁄4 Cup (4 tbs)|
1. Place water and butter in 1 1/2-quart glass casserole; cover.
2. Microwave for about 2 minutes on HIGH, or until hot. Add milk; stir in remaining ingredients, except egg whites and crumbs. Beat well.
3. Beat egg whites in small mixing bowl until stiff peaks form; fold into potato mixture. Sprinkle with bread crumbs.
4. Microwave for about 20 minutes on med.high (Roast), or until set (about 160°F). Let stand 5 minutes before serving.
