|Cubed new potato||1 3⁄4 Cup (28 tbs)|
|Water||1 1⁄2 Cup (24 tbs)|
|Cooking apple||1 Cup (16 tbs), diced|
|Lemon juice||1 Tablespoon|
|Vegetable cooking spray||1|
|Vegetable oil||2 Teaspoon|
|Onion||1⁄2 Cup (8 tbs), chopped|
Combine potato and water in a medium saucepan.
Bring to a boil; cover, reduce heat, and simmer 10 minutes or until potato is almost tender.
Drain well, and set aside.
Combine apple and lemon juice.
Toss; set aside.
Coat a large nonstick skillet with cooking spray; add oil.
Place over medium-high heat until hot.
Add potato and onion; saute until potato is lightly browned and onion is tender.
Add reserved apple; cover and cook 1 minute.
Uncover and cook an additional 2 minutes.
