Creamy Potato Skins

Ingredients
  Potatoes 3 Pound (1.5 Kilogram)
  Butter 3 Ounce, melted (90 Gram)
  Sour cream 8 Ounce (1 Cup Or 250 Gram)
  Snipped chives 2 Tablespoon
Directions

1. Scrub potatoes, pierce with a fork and bake for 1 hour or until potatoes are tender.
2. Cut potatoes into quarters and carefully remove flesh, leaving a 5mm/1/4in shell. Reserve the cooked potato for another use.
3. Increase oven temperature to 240°C/ 475°F/ Gas 8.Brush both surfaces of potato skins with melted butter, place on a baking tray, sprinkle with salt and bakefor 10-15 minutes or until skins are crisp.
4. Place sour cream and chives in a small bowl and mix to combine. Serve with potato skins.
