Potato Plate

Ingredients
  Tiny new potatoes 1 Pound (Whole Ones / Small Potatoes)
  Shredded lettuce/Torn spinach leaves / torn salad greens 1⁄2 Pound
  Dairy sour cream 1⁄4 Cup (4 tbs)
  Creamy french salad dressing 2 Tablespoon
  Snipped parsley 2 Tablespoon
Directions

Cook new potatoes in boiling salted water for 12 to 15 minutes or till tender.
Drain potatoes; cool.
Chill.
Carefully cut potatoes into 1/4-inch-thick slices.
Line 6 individual salad plates with shredded lettuce, spinach, or salad greens.
Arrange potato slices on top.
For dressing, stir together sour cream and salad dressing; drizzle over salads.
Sprinkle with parsley
