O Larry's Skillet Potatoes
|Potatoes||2 Pound, cut into 1/2 inch cubes|
|Onion||1 Medium, finely chopped|
|Sweet red pepper||1 Medium, chopped|
|Garlic||2 Clove (10 gm), minced|
|Caribbean jerk seasoning||1 Teaspoon|
|Olive oil||1⁄4 Cup (4 tbs)|
Place the potatoes in a large saucepan and cover with water.
Bring to a boil.
Reduce heat; cover and simmer for 5-10 minutes or until almost tender.
In a large skillet, saute the onion, red pepper, garlic, Caribbean jerk seasoning, salt and potatoes in oil until potatoes are golden brown and vegetables are tender.
