O Larry's Skillet Potatoes's picture
  Potatoes 2 Pound, cut into 1/2 inch cubes
  Onion 1 Medium, finely chopped
  Sweet red pepper 1 Medium, chopped
  Garlic 2 Clove (10 gm), minced
  Caribbean jerk seasoning 1 Teaspoon
  Salt 1 Teaspoon
  Olive oil 1⁄4 Cup (4 tbs)

Place the potatoes in a large saucepan and cover with water.
Bring to a boil.
Reduce heat; cover and simmer for 5-10 minutes or until almost tender.
In a large skillet, saute the onion, red pepper, garlic, Caribbean jerk seasoning, salt and potatoes in oil until potatoes are golden brown and vegetables are tender.
