Grated Sweet Potato Pudding
|Butter||1⁄3 Cup (5.33 tbs)|
|Grated raw sweet potato||4 Cup (64 tbs)|
|Honey||2⁄3 Cup (10.67 tbs)|
|Milk||1 1⁄2 Cup (24 tbs)|
|Chopped nuts||1⁄2 Cup (8 tbs)|
|Raisins/Chopped prunes||1 Cup (16 tbs)|
|Eggs||3 , well beaten|
|Light cream||1 1⁄2 Cup (24 tbs)|
Preheat oven to 350° F.
and grease a 2-quart casserole.
In a medium-size saucepan, melt butter.
Add sweet potatoes, salt, honey, milk, nuts, raisins or prunes, and spices.
Place over low heat, and stir until mixture is well heated.
Add eggs slowly, stirring constantly.
Pour mixture into the prepared casserole and bake in preheated oven for 30 to 40 minutes.
