Diner Skillet Potatoes
|All purpose potatoes||1 1⁄2 Pound, peeled and diced|
|Bell peppers||2 Large, chopped (Red / Green / Both)|
|Onion soup mix||2 Ounce (Lipton Recipe Secrets)|
|Olive oil/Vegetable oil||2 Tablespoon|
In large bowl, combine potatoes, peppers and onion soup mix until well coated.
In 12-inch nonstick skillet, heat oil over medium heat and cook potato mixture, covered, stirring occasionally, 10 minutes.
Uncover and cook, stirring occasionally, an additional 10 minutes or until tender.
