Rice & Turkey Hash
|Ground turkey||12 Ounce|
|Sliced onion||1 Cup (16 tbs)|
|Julienned green bell pepper||1 Cup (16 tbs)|
|Canned plum tomatoes with juice||2 Cup (32 tbs), coarsely chopped|
|Tomato juice||2 Cup (32 tbs)|
|Long grain white rice||6 Ounce|
|Chili powder||2 Teaspoon|
|Freshly ground black pepper||1⁄8 Teaspoon|
1. Spray ridged microwavable pan with nonstick cooking spray. Place turkey, onion, and bell pepper in pan; cover with paper towel. Microwave on High 5 minutes, stirring once during cooking to break up turkey and rearrange vegetables. Drain excess liquid.
2. Transfer turkey mixture to shallow 3-quart casserole; stir in remaining ingredients. Cover tightly with lid or vented plastic wrap. Microwave on High 8 to 10 minutes, until just boiling. Reduce setting to Medium-High; microwave 10 minutes longer, until rice is tender. Let stand, covered, 5 minutes.
