Roasted Potatoes

Ingredients
  Potatoes 4 Large, baking
  Olive oil 3 Tablespoon
  Salt 1 Teaspoon
  Pepper 1⁄4 Teaspoon
Directions

1. Preheat oven to 375°. Cook potatoes in a large saucepan of boiling salted water for 10 minutes only. Drain and peel off skins. Cut potatoes into thick chunks about 2x1 inch.
2. Pour olive oil into a 13 x 9-inch baking dish. Add potatoes and toss to coat with oil. Season with salt and pepper. Roast, turning once, 35 minutes, or until tender inside and crispy brown outside.
