Peppers Frt Potatoes

Ingredients
  Margarine 2 Tablespoon
  Pepper red 1 Cup (16 tbs), sliced
  Green pepper 1 Cup (16 tbs), sliced
  Chopped onion 1 Cup (16 tbs)
  Garlic 1 Clove (5 gm), minced
  Chicken broth and seasoning mix 2 Ounce (2 Packets, Weight Watchers')
  Pepper 1⁄8 Teaspoon
  New potatoes 1 Pound, thinly sliced
  Parsley 1 Tablespoon
Directions

Heat margarine until bubbly.
Add peppers, onion and garlic.
Saute until softened.
Stir in 1 1/2 cups water, broth and pepper.
Bring to a boil.
Reduce heat to low.
Stir in potatoes.
Let simmer, stirring occasionally, until done, approximately 15 to 20 minutes.
