|Diced celery||1⁄2 Cup (8 tbs)|
|Minced onion||1⁄3 Cup (5.33 tbs)|
|Diced green pepper||1⁄4 Cup (4 tbs)|
|Steamed soy sprouts||1 Cup (16 tbs)|
|Vinegar||1⁄3 Cup (5.33 tbs)|
|Freshly ground pepper||To Taste|
|Dijon mustard||1 Teaspoon|
|Melted butter||1⁄3 Cup (5.33 tbs)|
Put potatoes in large bowl.
In skillet heat butter.
Saute celery, onion and green pepper until wilted, about 5 minutes.
Add vegetables and soy sprouts to cubed potatoes.
Mix together vinegar, mustard, salt and pepper.
Pour over potatoes and toss gently to mix.
Spoon into shallow baking dish.
Pour melted butter over all.
Broil 4 to 5 inches from heat until heated through and golden.
