Christmas Lima And Potatoes
|Dried lima beans||8 Ounce (1 Package, Christmas)|
|Cubed potatoes/Sweet potatoes||480 Milliliter (2 Cups, White / Yellow Colored)|
|Chopped onion||120 Milliliter (1/2 Cup)|
|Water/Chicken broth||960 Milliliter (4 Cups)|
|Chopped fresh dill||15 Milliliter (1 Tablespoon)|
|Salt||1⁄2 Teaspoon (3 Milliliter)|
|Pepper||1⁄4 Teaspoon (1 Milliliter)|
Place beans in a saucepan with water to cover.
Bring to boiling; boil 2 minutes.
Remove from heat; cover and let stand 1 hour.
Drain beans; in same pan combine beans with potatoes, onion and water or broth.
Bring to boiling; reduce heat.
Simmer, partially covered, for 45-60 minutes, or until beans are tender.
Drain well; stir in dill, salt and pepper.
