Solar Roasted Garlic Potatoes

SunshineCooking's picture
Enjoy this side dish over a meal. To add variety cook it in a solar cooker. Roasting garlic and potates will take time to be cooked in sunshine but the effort is worth the time.
  Garlic bulb 1
  Potatoes 6
  Garlic 1
  Salt To Taste
  Pepper To Taste
Olive oil 1 Cup (16 tbs)
  Butter 1⁄4 Cup (4 tbs)
  Milk 5 Tablespoon

Place potatoes in a black pan and then in the heater for roasting. Also roast one bulb of garlic. Slice the bulb into half and sprinkle salt, black pepper and drizzle olive oil on it and place the bulb on a foil. Wrap it and place the foil in a black clay pot with a lid in a solar heater for roasting. The garlic was fully cooked in 3 hours while potatoes in 4 hours. Mash potatoes and add butter, salt and pepper to taste, roasted garlic and then milk. Add more milk if required. Mix the dish well and serve.
