Potato! This yummy potato salad is as simple to make as its name is. It is a great dish for your weekend luncheons. I am sure you will all fall prey to this mouthwatering and unique Potato salad!
Ingredients
  Potatoes 4 Cup (64 tbs), cooked and diced
  Cucumber 1 Cup (16 tbs), diced
  Chives 1⁄4 Cup (4 tbs), minced
  Celery seed 1⁄2 Tablespoon
  Sea salt 1⁄2 Tablespoon
  Cashew butter 1⁄2 Cup (8 tbs)
  Tofu mayonnaise 1 Cup (16 tbs)
  Paprika 1 Tablespoon
  Cider vinegar/Pickled juice 1⁄4 Cup (4 tbs)
  Hard cooked eggs 3
  Pickles 2
Directions

Combine potatoes, cucumbers, chives, celery seed, salt, and diced egg whites.
Mash yolks and mix with the cashew butter, mayonnaise, paprika, and vinegar.
Pour over the potato mixture and chill.
Garnish with sliced pickles.
