Potato! This yummy potato salad is as simple to make as its name is. It is a great dish for your weekend luncheons. I am sure you will all fall prey to this mouthwatering and unique Potato salad!
|Potatoes||4 Cup (64 tbs), cooked and diced|
|Cucumber||1 Cup (16 tbs), diced|
|Chives||1⁄4 Cup (4 tbs), minced|
|Celery seed||1⁄2 Tablespoon|
|Sea salt||1⁄2 Tablespoon|
|Cashew butter||1⁄2 Cup (8 tbs)|
|Tofu mayonnaise||1 Cup (16 tbs)|
|Cider vinegar/Pickled juice||1⁄4 Cup (4 tbs)|
|Hard cooked eggs||3|
Combine potatoes, cucumbers, chives, celery seed, salt, and diced egg whites.
Mash yolks and mix with the cashew butter, mayonnaise, paprika, and vinegar.
Pour over the potato mixture and chill.
Garnish with sliced pickles.
