|Ground cooked turkey||3 Cup (48 tbs)|
|Finely chopped cooked potatoes||3 Cup (48 tbs)|
|Chopped green pepper||3 Tablespoon|
|Finely chopped onion||1⁄2 Cup (8 tbs)|
|Black pepper||To Taste|
|Turkey broth/Canned chicken consomm||3⁄4 Cup (12 tbs)|
|Poached eggs||4 Small|
|Tabasco sauce||4 Tablespoon|
1. Preheat oven to moderate (350° F.).
2. Mix together the turkey, vegetables, seasonings and broth. Place in one large greased casserole or four individual greased casseroles. Cover.
3. Bake one hour for large casserole, or about forty minutes for individual casseroles. Halfway through the baking, remove cover to permit browning.
4. Arrange poached eggs on top of the hash and serve with Tabasco sauce.
