Pittsburgh Potatoes

Ingredients
  Salted water 1 Cup (16 tbs) (As Required)
  Peeled and cubed potatoes 4 Cup (64 tbs)
  Onion 1 Medium, chopped
  Pimientos 3 , chopped
  White sauce 2 Cup (32 tbs)
  Grated mild cheese 1 Cup (16 tbs)
Directions

Bring a large pot of salted water to a boil.
Add potatoes and onion.
Cook for 5 minutes.
Add pimientos and continue cooking for 7 minutes.
Drain.
Turn mixture into a buttered 2 quart baking dish.
Cover with white sauce and cheese.
Bake in a 350°F oven 15 to 20 minutes, or until potatoes are tender.
