Potato And Courgette
|Garlic||1 Clove (5 gm), crushed|
|Chili powder||1⁄2 Teaspoon|
|Ground coriander||2 Teaspoon|
|Ground cumin||1 Teaspoon|
|Courgettes||450 Gram, sliced|
|Potatoes||225 Gram, halved|
|Finely sliced red pepper||1 Tablespoon (For Garnishing)|
Heat the oil in a pan and fry the garlic for 30 seconds.
Add the spices, salt and water, stir well and fry gently for 2 minutes.
Add the vegetables, stir thoroughly, cover the pan and cook gently for 20 minutes or until the vegetables are cooked, stirring occasionally.
Garnish with the red pepper to serve.
