Potato Hot Stacks

Potato hot stacks are potato pancakes prepared with grated potatoes and onions. Combined together with a batter of egg and milk, the potato hot cakes are grea for breakfasts or for supper or brunch.
Ingredients
  Grated potato 2 Cup (32 tbs)
  Grated onion 3 Tablespoon
  Egg 1 , beaten
  Enriched flour 1 Tablespoon
  Salt 1⁄2 Teaspoon
  Pepper 1 Dash
  Milk 2 Teaspoon
  Bacon drippings 2 Tablespoon
Directions

Combine potato, onion, and egg in mixing bowl; add flour, salt, pepper, milk, and bacon drippings.
Blend well.
Drop batter (2 tablespoons per pancake) into skillet containing a little hot bacon drippings.
Fry until golden brown, turning once.
Add more bacon drippings to skillet as needed.
