Potato Hot Stacks
|Grated potato||2 Cup (32 tbs)|
|Grated onion||3 Tablespoon|
|Egg||1 , beaten|
|Enriched flour||1 Tablespoon|
|Bacon drippings||2 Tablespoon|
Combine potato, onion, and egg in mixing bowl; add flour, salt, pepper, milk, and bacon drippings.
Drop batter (2 tablespoons per pancake) into skillet containing a little hot bacon drippings.
Fry until golden brown, turning once.
Add more bacon drippings to skillet as needed.
