Cheesy Potatoes & Franks
|Chopped onion||1⁄2 Cup (8 tbs)|
|Vegetable shortening||1⁄4 Cup (4 tbs)|
|Flour||1⁄4 Cup (4 tbs)|
|Milk||2 Cup (32 tbs)|
|Shredded process american cheese||1 Cup (16 tbs)|
|Prepared mustard||1 Tablespoon|
|Sliced potatoes||3 Cup (48 tbs)|
In saucepan, cook onion in hot vegetable shortening until tender; stir in flour and salt.
Add milk; cook and stir over low heat until thickened and bubbly.
Remove from heat; stir in cheese and mustard.
Cut frankfurters in 1/4 inch slices.
In greased 2 quart casserole, arrange layers of half the potatoes, frankfurters, and cheese sauce; repeat layers.
Bake at 325° for 1 1/4 hours.
